Color is one of the essential sensory properties. It is a critical component in the ultimate decision-making when purchasing food.
Processed foods such as cereals, bread, pasta, and baby and pet food require good processing conditions to generate a product with consistent color. A change in color in the final product (aka color variance) results from poor processing conditions (changes in heat, cooling, mixing, etc.).
